Delectable Chicken and Vegetable Rice Delight

Ingredients

  • 1 teacup of rice
  • 550-650 g of boneless, skinless chicken meat
  • 2 medium-sized carrots
  • 2 medium green peppers (not spicy)
  • 1 tablespoon of coconut oil

 

Steps

  1. Thoroughly wash all ingredients.
  2. Soak chicken and rice separately in cold water for 30 minutes; discard the water afterward.
  3. Dice the carrots.
  4. Clean and cube the peppers, removing seeds.
  5. In a saucepan, melt coconut oil and sauté carrots and peppers on low heat until soft. Stir periodically.
  6. Remove the casserole from heat when vegetables are tender.
  7. Place chicken in a saucepan, covering it with cold water. Boil for 20 minutes at maximum temperature, removing any resulting foam. Debone and tear chicken into medium-sized pieces.
  8. Add rice to the leftover chicken broth, stirring until boiling. Remove from heat when broth has almost evaporated, and the rice is cooked.
  9. Mix vegetables into the rice, then add the chicken—give it a final stir. Hop and done!
